I want to share a recipe that is simple as well as low fat and costs very little expense! Thanks to our reader, Carrie J. for sharing this with us.
Pumpkin Spice Muffins:
1 Spice cake mix
1 small can of pumpkin
1/2 can of water
Mix together until well blended. Spray muffin cups with pam and fill muffin cups 2/3 full. Bake in a 350 degree oven for 20 to 22 minutes or until done. Cool and remove from pan.
The muffins are very moist and delicious.
They are very low in calories and only 2 points if you are on Weight Watchers!
One of my readers Jennifer C. emailed me to let me know that this recipe also works with Chocolate Cake Mix! YUM!

These are the best muffins! Yummy!
These look great! i am going to make them for Thanksgiving brunch!
I’ve got to try this. So easy!
This might be a silly question but do you follow the directions on the box and add 1/2 cup water and the pumkin?
This recipe is also good with a chocolate cake mix too!
I have made something simaler and no, you just need these 3 ingredients. Not a silly question:)
Ive been making these for years and they are great! A tip for u tho… Adding 2 egg whites make these not so dense and they rise a little more. Doesn’t add calories or any extra WWpoints!
Thank you guys so much! I am making them right now
