Tequila Lime Chicken

For those of you who do not mind the fattening way here is the recipe for Tequila Lime Chicken!
Serving Size 4

Shopping List:
1. 4 boneless chicken breast
2. 1 Kroger brand Tequila Lime w/ Lime juice 30 minute marinade. 16 oz
3. 1 Hidden Valley spicy Ranch w/ mild chili and select herbs
4. 1 salsa
5. 1 – 1 lb bag of shredded cheddar or shredded Mexican cheese
6. 1 large bag of tort strips or you can substitute regular tort chips (just not the same lol)
7. 2 bags (8.8 oz ) of micro rice regular or cheesy rice
8. 2 large tomatoes or 3 roma tomatoes
9. 1 large onion
10. 1 bunch green onion
11. cilantro
12. 2 serrano peppers
13. 2 limes or lemons (I prefer lime)

Step One:

Place chicken in a gallon size ziploc bag. Dump whole bottle of marinade in. Push air from the bag before zipping. Roll the bag and place in frig. I marinate for at least 6 hours, turning the bag over at the 3 hour mark!

Step Two: “Pico De Gallo” Cut Tomatoes and white onion into the smallest pieces possible. Chop green onion and cilantro. Cut peppers as small as possible but make sure to taste after adding to the mix for heat factor. (ADD THEM FEW AT A TIME THEN TASTE!!!) Juice limes (or lemons) into bowl with rest of mixture. Add salt and pepper to taste. Let it sit for 5 hours in refrigerator to marinate. (YOU CAN SKIP THIS STEP AND USE SALSA IF YOU WANT. IT IS NOT THE SAME BUT LESS HASSLE)

Step Three: Grill Chicken – While your husband or wife are grilling, you can finish the inside stuff. I place foil on a pan and hit it with some spray pam. Then I stack a handful or so of tortilla chips on pan in four “haystacks”. (If using tortilla chips you will need to crush them up some) Place a half hand full of cheese on top of the haystack. Then wait for your chicken.

Step Four: Turn oven broiler on low. Place chicken on top of your haystack and then pour generous amount of Spicy ranch on top. Then top with more shredded cheese. Place pan in oven and watch it.  When the cheese melts and is bubbling or turning light brown, Take it out.

Step Five: When serving, serve with pico on top of cooked chicken or place beside chicken. Some people do like it served with sour cream.

Side dish I make is Rice  Included in shopping list

White rice, cheesy rice, Sante Fe Rice is my favorite (Uncle Bens, of course!)
add cup of salsa or your pico de gallo only to white or cheesy!
2 hands full of tort chips
2 hands full of shredded cheese
Just mix and eat Add ingredients as needed

Some like it with refried beans

LOW FAT OPTION

Substitute fat free or low fat cheese instead of regular

Substitute fat free ranch and light salsa for the spicy ranch (just mix it together)

Sub Fat free sour cream if desired

Leave out tortilla strips or used baked tortilla chips

*I also have been cutting the chicken and combining everything in to a NACHO (even the rice)!  I use both the Sante Fe Rice and White Rice with Salsa!

It is very very YUMMY!
