Chicken Breast with Avocado is our favorite summer recipe! The avocado and pepper jack cheese make a great combination. In fact you can freeze avocado and use it for this recipe too! Sometimes we add a fresh tomato from our garden too!

- 2 - 5 oz. chicken breast
- 2 - avocado slices
- 2 - slices pepper jack cheese
- 2 slices - tomato
- Saute chicken breast until golden brown and cooked through, approximately 5 minutes per side. Top with avocado, tomato and pepper jack cheese. Melt cheese under broiler or in a covered skillet. Serve immediately.
- Can also be made on the grill or baked in the oven. Cook through and then add toppings to melt cheese.
