Chicken Breast with Avocado

Chicken Breast with Avocado is our favorite summer recipe! The avocado and pepper jack cheese make a great combination.  In fact you can freeze avocado and use it for this recipe too!  Sometimes we add a fresh tomato from our garden too!

Chicken Breast with Avocado

Serves: 2
Ingredients
  • 2 – 5 oz. chicken breast
  • 2 – avocado slices
  • 2 – slices pepper jack cheese
  • Optional:
  • 2 slices – tomato
Instructions
  1. Saute chicken breast until golden brown and cooked through, approximately 5 minutes per side. Top with avocado, tomato and pepper jack cheese. Melt cheese under broiler or in a covered skillet. Serve immediately.
  2. Can also be made on the grill or baked in the oven. Cook through and then add toppings to melt cheese.

  4. I’m totally having this for dinner this week, but I’m curious. Your directions say “pepper jack cheese”, but the photo looks more like Colby Jack or something like that. Which ones goes best with the avocado?
