This is one of our favorite recipes. I love that it is a Vegetarian recipe and that you can substitute any veggies in your stockpile for it. You can also make it gluten free by using gluten free bisquick. It is crowd pleaser at our house. Serve it for breakfast, brunch or brinner and you will always have a happy family! Impossibly Easy Vegetable Pie

Ingredients
- 2 cups (10 oz) pkg frozen broccoli and cauliflower (rinsed and thawed)
- ⅓ cup chopped onion
- 1 cup shredded cheddar
- ½ cup bisquick (can use gluten free)
- 1 cup milk
- ½ tsp salt
- ¼ tsp pepper
- 2 eggs
Instructions
- Preheat oven to 400 degrees. Grease 9″ pie plate. Stir together broccoli/cauliflower, onion and cheese into pie pie plate. Stir together bisquick, milk, eggs, salt and pepper. Pour into pie plate over veggies.
- Bake 35 to 45 minutes or until golden brown and knife inserted comes out clean. Cool 5 minutes.
