Pork Chop Bake – Follow Up

Hello Everyone, I wanted to make a whole post on the Pork Chop Bake.  It seems people are having trouble getting the potatoes to cook.  I had the same problem tonight.  We decided to make it tonight instead of tomorrow.  I ended up taking the potatoes out and cooking them by themselves in the Italian dressing until they were soft.  I poked them with a knife.  Then I threw them back in the bake and put them back in the oven.

With that being said, I would cook the potatoes first or in a small dish along side the bake.  Then put them in the bake the last 10 minutes or so.  This is the only way I can think of to get them to be tender.  It is a very good recipe and is very tasty!  We just need to find a way to prefect it.  If there are any other ideas please post them or shoot me an e-mail!

Prep Time: 10 min              Total:45 min

4 bone-in pork chops
1 pkt. Shake N’ Bake Original Pork Seasoning
1 lb potatoes (usually 3 small or 2 med)
1 cup mozzarella cheese (can be 2%)
Zesty Italian Dressing
1/2 cup of BBQ sauce

Preheat oven to 400.  Coat the pork chops with the Shake N’ Bake and place on foil lined 13×19 inch baking dish.
Slice Potatoes into wedges!
Add Potatoes and drizzle Italian Dressing over the whole bake.  Be generous!  Especially on the potatoes!
Bake 30 minutes.
Remove from oven and top each pork shop with 2 Tbsp BBQ sauce and 1/4 cup cheese.
Put back in oven and bake an additional 5 minutes or until cheese is melted.

We serve Applesauce as a side dish!
