There is a new Gluten Free Bakery called AJ Creations in Covington, KY. It sells only gluten-free pastries. They offer six types of cookies, cupcakes and muffins. Among the top sellers are their “junk” muffins that includes banana, walnut, flax seed and four dried fruits. There products are entirely gluten free. Gluten, a protein found in wheat, barley and rye are not used and instead they bake with rice, flour and other starches.
