Ingredients:
5 1/2 cups mashed potatoes (4 lb)
1/2 cup milk
1 8 oz low fat sourcream
2 tsp. parsley flakes
3/4 cup shredded cheddar cheese
1/2 cup cooked crumbled bacon (12 slices)
Directions:
Place all ingredients except cheese and bacon in a large bowl. Beat with an electric mixer on medium/high speed until potatoes are smooth. Spoon mixture into a lightly greased 9×13 dish. Sprinkle with cheese and bacon. Cover and bake in a 350 degree oven for 30 minutes or until heated through.
You can use store bought mashed potatoes and eliminate the milk (no one will ever know

This sounds really good. I have a question……you mean instant mashed potatoes out of a box right? Just mix the potato flakes with the sour cream or prepare the potatoes by following the directions on the box and them add the sour cream?
Oh no, I mean prepared like, Bob Evans or Country Crock or any already made and ready to microwave.
Very yummy–anything that includes potatoes and bacon…
