Ingredients
  • 1¾ cup all-purpose flour
  • ⅓ cup sugar
  • 2 tsp. baking powder
  • 2 TBSP cinnamon
  • ¼ tsp salt
  • 1 beaten egg
  • ¾ cup milk
  • ¼ cup oil
  • Strudel Topping:
  • 3 TBSP all purpose flour
  • ¼ cup brown sugar
  • 1 TBSP cinnamon

Instructions
  1. Grease 12 muffin cups.
  2. In a medium bowl combine flour, sugar, baking powder, salt and cinnamon.
  3. Make a well in the center
  4. In another bowl combine egg, milk and oil and beat well.
  5. Add liquids to dry and stir just until moistened (batter will be lumpy).
  6. Spoon batter into muffin tins, ⅔ full.
  7. Combine strudel topping and cover muffins.
  8. Bake in a 400 degree over for 20 minutes or until golden brown.
  9. Cool on a wire rack for 5 minutes and remove from cups.
  10. Serve warm with butter.

  5. I just made these and the came out awful. I think you maybe missing some ingredients in the strudel.

  6. I just made this but made it like a coffee cake and the streusel needed butter. I put butter on top at the end but the muffin/cake itself was very dry. I ended up putting several tbs coffee over it and it was perfect. I would suggest warm milk or cream or something poured over right before you eat it.
