Gluten Free Slow Cooker Squash & Apples

Gluten Free Slow Cooker Squash & Apples

This dish tastes a lot like hot apple pie, but is far more healthy! (I served it as a side dish to chicken nuggets, but it could be used with a vegetarian meal too.)
Ingredients
  • 2 cups pureed butternut squash
  • 3 apples, peeled, cored, and sliced
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon
  • ¼ cup honey
  • 2 Tbsp coconut oil, melted
  • ¼ cup sliced almonds

Instructions
  1. Spread butternut squash puree in bottom of slow cooker.
  2. Layer sliced apples over the squash puree.
  3. In a small bowl, combine spices, honey, and coconut oil.
  4. Drizzle over apples and squash.
  5. Cover and cook on low for 6 hours.
  6. Sprinkle sliced almonds on top for last 30 minutes of cooking time.
