I have been really watching what I have been eating and when I saw this recipe for Avocado Chicken Salad made with very little Mayonnaise I was so excited! I am making this for lunch this week!

Ingredients
- chicken, cooked and shredded
- avocado
- mayo, just a little
- green onion, sliced
- cilantro
- lime juice to taste
- salt/pepper to taste
Instructions
- There are no measurements for this recipe because the original author made it to her desired taste however she thinks she started with 2 cups of chicken. She used 1 avocado. The rest would be to your taste and desired consistency.

I’m going to try this & use a can of chicken meat instead of having to cook it. I’m looking to only stock up on whats low, & be able to survive on pantry/fridge/freezer goods the second 2 weeks of the month, & go to the store for the first 2 weeks. My food budget comes in the 11th, each month, so since I’m limited on what I can spend, I have alot of stretching to do.
I’m going to get kid approval, or denial, too. (Will rerate it if I can after tryingg it!)
I’ll let you know how it tastes when I make it
Did the avacado get brown right away?
You can keep a pit in the salad and it will help – I plan to eat it at once…LOL
