A wonderful pairing of orange and chocolate makes for a delicious treat!
Ingredients
  • ¾ cup shortening
  • 2 cups white sugar
  • ¼ cup brown sugar
  • 5 eggs
  • 1 tsp orange peel, grated
  • 1 tsp vanilla
  • ½ cup coconut flour
  • ½ cup almond meal
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup chopped apricots
  • ½ cup chopped walnuts
  • 1½ cups baking cocoa

Instructions
  1. Preheat oven to 350 degrees.
  2. Grease 9×13 baking pan.
  3. In large mixer bowl, beat shortening, sugars and eggs until light and fluffy. Add orange peel and vanilla; blend well.
  4. Stir in flours, baking soda and salt.
  5. Stir in chopped apricots, walnuts, and baking cocoa.
  6. Spread mixture into greased pan.
  7. Bake 25-30 minutes or until toothpick inserted in center comes out clean.
  8. Allow to cool, then cut into bars.
