Crockpot Chicken and Veggie Delight

Crockpot Chicken and Veggie Delight is perfect for the summer – so easy and doesn’t heat up your kitchen!  Plus if you garden you will have fresh veggies to choose from!  You can substitute with any veggie and if you want to make this vegetarian I would suggest tofu or potatoes instead of chicken. We like to serve over rice or quinnoa.  Enjoy!

  • 1 32 oz Can of Die Fratelli Tomato Sauce
  • 4 chicken breasts
  • Variety of Veggies, Cut up - Peppers, Zucchini, Onion, Mushroom (whatever your family likes and you have on hand)
  1. Place chicken in crockpot
  2. Add veggies
  3. Add tomato sauce
  4. Add Basil and Oregano (I like fresh)
  5. Add water if necessary to cover.
  6. Cook on high heat for 1 hour and turn down to low for 3 hours
  7. Enjoy over a bed of rice


  1. Looks delicious, and I can’t believe how easy this is to make. For vegetarians, do you think this dish would work with potatoes or tofu instead?

    Add a tsp of rosemary, thyme and marjoram and it is like chicken caccitore!
