Choosing older eggs are the best tip! After you hard cook the egg – (see this post for how to hard cook an egg) let it sit in cold water for 10 minutes to stop the cooking process. Add ice and chill for 5 minutes. Gently tap on a hard surface (like your sink) and peel under cold running water or submerged in cold water.
