Classic Potato Salad

This is one of my favorite foods and naturally gluten free too :-) It is a favorite for family gatherings, picnics and potlucks.

Classic Potato Salad

Serves: 6
  • 6 medium potatoes
  • 1¼ cup mayonnaise
  • 1 TBSP prepared mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • ⅓ cup finely chopped onions
  • ½ cup chopped sweet pickles – or pickle relish
  • 6 hard cooked eggs
  • ⅓ cup green pepper – optional
  • ⅓ cup celery – optional
  • sweet pickle juice
  1. Peel and cut potatoes into chunks.
  2. Boil potatoes, drain well.
  3. Allow potatoes to cool slightly.
  4. Combine mayonnaise, mustard, salt, pepper.
  5. Stir in onion and pickles.
  6. Add potatoes and eggs.
  7. Toss to coat.
  8. Add enough pickle juice for desired consistency.
  9. Cover and chill for 6 to 24 hours.
  10. Garnish with hard boiled egg slices or paprika.
