
This recipe is so easy to prepare – my family loves it! It can easily make a weekly appearance in my menu plan all summer long! In fact grilling season is my favorite season of the year because I get a break in the kitchen and my husband takes over. I love making my own marinade because I know what is in it and it can be gluten free and non processed. It is easy to start with an olive oil and balsamic vinegar then add spices to change up the flavor. We like to serve it with corn or rice.

- 4 boneless pork chops
- ¼ cup lime juice
- ¼ cup olive oil
- 1 tsp ground ginger
- ½ tsp ground garlic
- In a zip loc bag marinate pork chops with lime juice, olive oil, ginger and garlic. Allow to marinate at least 4 hours – best if over night in the refrigerator.
- Discard marinade and bake in a 400 degree oven for 20 minutes or on the grill.
