Sausage Egg & Cheese Festival

My friends and I went to Jamaica a couple weeks ago.  We went on an ATV ride through the back hills of Jamaica and met some amazing people. While we there a Jamaican man cooked for us. He was as sweet as he could be and I begged him to teach me how to make their native festival! It was amazing! So I took a little cooking lesson there and brought it home for you! A week before I left, Johnsonville asked me to create a recipe using their sausage and pair it with OreIda hashbrowns. After we returned home I had all my friends who traveled with us over and we recreated our version of Festival!  You can see the full recipe below in printable form.

Ingredients:

8 Johnsonville Sausage Links
4 eggs Scrambled
1/2 Bag OreIda Hashbrowns
1 1/2 Cups Flour
3 1/2 tablespoons Cornmeal
1 cup water
4 tablespoons sugar
1 teaspoon baking powder
1 1/2 tablespoon Vanilla
Cheese (your preference, we used Cheddar)
Honey

Directions:

1.5 hours before starting your Festival you will need to prepare your dough.
Sift the flour in to a large mixing bowl.
After sifting the flour stir in the cornmeal, salt, sugar, and baking powder
Stir all the ingredients until well blended.

Prepare one cup water and add your vanilla
Start adding the vanilla water to your mixture.
Using your fingertips slowly work the water in to the mixture
After using almost half the cup the dough will look like shredded bread
Continue adding the water until the dough becomes firm
If your mixture is really sticky you can add extra flour
Cover the mixture and let it stand for at least 45 minutes

When your dough has sat for 30 minutes you can start cooking your sausage, hashbrowns, and eggs
Dice your sausage, hashbrowns, eggs, and cheddar cheese (we did not measure out cheese) on a cutting board

Separate dough in to four sections
Each section should be rolled flat or pushed out using hands
Drizzle honey over the flattened dough
Place your Egg, Sausage, Hashbrown mixture in the middle
(Some people added more cheese on top)

Fold your Festival up on the sides and roll up
Your Festival will look like this. It looks much larger in the picture. You want to keep them as small as possible to prevent insides being doughy after cooking.

Fix a baking dish with cornmeal and flour to cover each piece before frying.
We used our little deep fryer and we cooked each one for approximately 8 minutes. You will need to watch for the Festival to turn a golden brown. You may have to turn the Festival in the fryer if the fryer is small. Watch closely so the product does not burn!

We were all in heaven! It brought the great taste of Jamaica to Kentucky! I hope you enjoy!
