This recipe is made with sprouted Way Better Snacks Simply Unbeatable Blues Tortilla Chips. There is nothing better than being able to add sprouted seeds to a dish that my family loves

These meatballs are very easy to prepare and you freeze them to use at a later time. This batch makes so much that I was able to divide into 3 meals. This meal can be gluten free as long as your meat and oats are Gluten Free. When I made these I made them for the freezer so when I did was pull it out of the freezer the night before and let it thaw in the fridge. Be sure to check out our Freezer Cooking Series. You could also make these meatballs into Muffin Size using this technique of meatloaf in a muffin tin.
- 2 eggs, lightly beaten
- 2 cups milk
- ½ cups oats (quick-cooking or old fashioned)
- 1½ cups Way Better Snacks, finely crushed
- 1 onion, chopped
- 2 teaspoons salt
- 2 teaspoons chili powder
- ½ teaspoon garlic powder
- ½ teaspoon pepper
- 3 pounds raw ground beef
- Barbecue Sauce:
- 2 cups ketchup
- 1½ cups packed brown sugar
- ½ cup chopped onion (optional)
- ½ teaspoon garlic powder
- Combine all meatball ingredients and mix well.
- Shape into one-inch balls and lay on a cookie sheet.
- To freeze: Freeze uncooked meatballs on a cookie sheet for one hour.
- Remove from cookie sheet and transfer to airtight ziptop freezer bags.
- To serve: Thaw meatballs overnight (or for 8 hours) in the refrigerator.
- Put in a greased baking dish and bake uncovered at 350 degrees for 18 to 20 minutes.
- Drain.
- While meatballs are cooking, combine Barbecue Sauce ingredients together in a saucepan on the stove.
- Bring to a boil.
- Reduce heat and simmer for two minutes, stirring frequently.
- Pour Barbecue Sauce over meatballs and bake for 10-20 minutes longer, or until done.

These look so good but, unfortunately, my daughter doesn’t care for bbq sauce.
Would these meatballs be good for something else like swedish meatballs or spaghetti and meatballs?

That is always my problem too
This is a great idea. I always add crackers or bread crumbs to meatloaf or meatballs but I never would have thought about adding Way Better tortilla chips! I’ll have to try it out!
