Chicken Avocado Spinach Salad is full of all the super foods that you need for a healthy lunch!

Chicken Avocado Spinach Salad is one of my favorite lunch or dinner choices.  You can add additional veggies of your choice.  It is filled with super foods!  I love that it is a healthy and clean choice.  This salad is a gluten free and Paleo lunch option!  If you make your own dressing you will be able to control additives and gluten. If you want a healthy store bough choice I like Walden Farms (low in sugar and carbs) or Marzetti Simply Dressed would be another choice.

Ingredients
  • Spinach, Fresh
  • Hard Boiled Eggs, sliced
  • Sliced Almonds
  • Bacon Crumbled, optional
  • Craisins
  • Grilled Chicken, chopped
  • Balsamic Vinaigrette Dressing
  • Avocado, sliced
  • Cucumbers, diced
  • Carrots, Sliced
  • Broccoli, optional
  • Cauliflower, optional
  • Sunflower seeds, optional
Instructions
  1. Add several handfuls of fresh spinach to a plate
  2. Add grilled chicken, sliced almonds, hard cooked egg, bacon and avocado
  3. Add balsamic vinaigrette dressing (you can make your own with balsamic vinegar and olive oil and a little lemon juice)
