Simply mash the bananas in a large bowl, then add remaining ingredients and mix well. Spray 2 small loaf pans or 1 large loaf pan with non-stick cooking spray and divide the batter and pour into two loaf pans. Next I topped one of the loaves with mini chocolate chips. I love chocolate chips on everything, well almost everything so I decided to add them to one loaf. Next, I put them in the oven and baked at for 35-40 minutes at 350 degrees. Best of all you can easily make this gluten free when you use a gluten free cake mix. Without the additional oil this is actually a lower fat version of traditional banana bread. Some readers thin it has a bit of cake texture but my family thought it was great. I like to keep yellow cake mix on hand and make this when I have surprise company visit.
