Baked Potatoes are my weakness with any dinner meal. I just love potatoes so much it doesn’t matter if they are fried, mashed, baked, diced or whole. They are naturally gluten free which is a plus for our household too! I especially love my potatoes with sour cream and butter, but I have been trying to be good and season them lightly.
Making baked potatoes for me is super easy because I have a microwavable potato pouch that I got at a craft show a few years back. All I have to do is wash the potatoes wrap them in a paper towel and place in the pouch and put in the microwave for about 6-7 minutes and have perfect baked potatoes. But most people do not have them so here is step by step directions to make them in your oven. You can follow these steps for white or sweet potatoes. Just note that sweet potatoes will release a syrup when baking so be sure to place on a baking sheet to help catch it.
How to Make Baked Potatoes
You will need 1 russet potato or sweet potato per person, olive oil, salt and pepper, a fork and a baking sheet covered in foil.
Heat the oven to 425°F and let preheat while you’re preparing the potatoes.
Scrub the potatoes thoroughly under running water and pat them dry. You don’t have to remove the eyes, but trim away any blemishes with a paring knife.
Rub the potatoes all over with a little olive oil. It’s easiest to use your hands, but a pastry brush also works fine.
Generously sprinkle the potatoes on all sides with salt and pepper.
Prick the potatoes in a few places with the tines of a fork. This allows steam to escape from the baking potato.
You can bake the potatoes directly on the oven rack, or you can place them a few inches apart on a foil-lined baking sheet (be sure to do this if you are making sweet potatoes). Bake the potatoes for 50 to 60 minutes. Flip them over every 20 minutes or so and check them for doneness by piercing them with a fork. Potatoes are done when the skins are dry and the insides feel completely soft when pierced.
To cut down the baking time, microwave the potatoes for 3 to 4 minutes in the microwave before baking.
For softer skins, wrap the potatoes in foil before baking.
