This delicious Slow Cooker Vegetable Soup is the perfect comfort dinner on a cold day! You can make this yummy soup in the crockpot in less than five minutes. Then let it slowly cook all day and have dinner ready for your family with no extra steps to take. I did make a french bread loaf to go with the vegetable soup for my hubby and boys, I just ate the soup. I am trying to stay on course on eating healthy. Which this scrumptious soup is clean eating and gluten free, so be sure to add it to your weekly menu plan!

- 1½ lb red potatoes, cut into large cubes
- ½ cup carrots, chopped
- ½ cup celery. diced
- ½ cup chopped onions
- 1 cup frozen corn
- 1 cup frozen cut green beans
- 1 (15 oz) can petite diced tomatoes, undrained
- 2 tsp Italian Seasoning
- 1 tsp black pepper
- 4 chicken bouillon cubes
- 4-5 cups water
- Add all ingredients to slow cooker.
- Stir well and place lid on.
- Set to Low and cook for 6 hours.
- Stir and enjoy!
