This delicious Slow Cooker Vegetable Soup is the perfect comfort dinner on a cold day! You can make this yummy soup in the crockpot in less than five minutes. Then let it slowly cook all day and have dinner ready for your family with no extra steps to take. I did make a french bread loaf to go with the vegetable soup for my hubby and boys, I just ate the soup. I am trying to stay on course on eating healthy. Which this scrumptious soup is clean eating and gluten free, and Vegetarian so be sure to add it to your weekly menu plan!

To prepare add all the ingredients to the slow cooker. Stir well and place lid on top of the crockpot. Set to Low and cook for 6 hours. Stir and enjoy! You can adapt this recipe to suit any needs. If you are eating Paleo simply omit red potatoes and use sweet potatoes. If you are eating Whole 30 omit the corn and use okra. The sky is the limit. This can easily become a freezer meal by placing all of your ingredients except the water and placing it into a gallon size freezer bag. Place in the freezer. When you are ready to use thaw in the refrigerator overnight. Place into the slow cooker and add your water. Cook on low for 6 hours.

Slow Cooker Vegetable Soup
- 1 1/2 lb red potatoes, cut into large cubes
- 1/2 cup carrots, chopped
- 1/2 cup celery. diced
- 1/2 cup chopped onions
- 1 cup frozen corn
- 1 cup frozen cut green beans
- 1 (15 oz) can petite diced tomatoes, undrained
- 2 tsp Italian Seasoning
- 1 tsp black pepper
- 4 chicken bouillon cubes
- 4-5 cups water
- Add all ingredients to slow cooker.
- Stir well and place lid on.
- Set to Low and cook for 6 hours.
- Stir and enjoy!
