We had a great night in the kitchen whipping up some awesome popcorn balls!  Thanks to Jolly Time and Good Cook, we enjoyed making the popcorn balls with a popcorn ball shaper.  The kids had a blast and so did my friend Misty!  We made Marshmallow Pop Corn Balls tonight and the kids drizzled (or kind of dumped) melted chocolate on top of them!  They were fantastic!

Recipe Ingredients:
12 Cups popped Jolly Time Pop Corn
1/4 Cup Butter or Margarine
1 bag (10 oz) Marshmallows
Vegetable Food Coloring (Optional)

Directions:
Put the popped corn in large bowl or pan; set aside.
In heavy saucepan, heat butter and marshmallows on low heat, stirring constantly until melted and smooth.
You can add food coloring if you wish to the marshmallow mix and stir until blended.
Pour mixture over pop corn and mix carefully until pop corn is well coated.
Press into balls using the Jolly Time Pop Corn Ball Maker, or butter your hands to protect them from the heat and shape as you wish.

The Good  Cook Pancake Creator is a new, fun product that allows you to create some amazing pancakes! My kids loved being creative and could not wait to eat their creations.  Talk about turning a meal into a family affair!  The experience was a lot of fun and sure beats simple round pancakes.

I was a little skeptical at first because I always try these types of things but am usually dissatisfied.  But not this time.  It was very easy to use and the design possibilities are endless.  The only problem I did have was getting all the batter to mix up and not clump at the bottom of the shaker. I recommend adding the pancake mix and water by alternating so it doesn’t all clump at the bottom. Other than that I have no complaints at all.  It was an extremely fun activity with the family and it was delicious at the same time.

Turning our creations was quite tricky at times, but very fun.  We recommend using chocolate chips, whip cream, or fruit to top off your creations.

Few parents realize that children’s feet remain vulnerable to ill-fitting shoes right up to the age of 18 years. A survey of 1,132 Moms conducted by Mom Central Consulting (MCC) found:

· 96% of Moms surveyed felt that proper footwear is either very important or important for their child’s overall well-being, although they did not know the critical years for bone development or walking patterns.

· 80% of Moms never discussed the importance of foot development and proper footwear with their child’s pediatrician.

· 69% of the surveyed Moms did not know if their child’s shoes have been tested, even though a quality shoe is the most important factor when making a purchasing decision.

· 44% of Moms don’t know critical bones in the foot aren’t completely formed until age 5.

Fact: Up until age five, a child’s foot is still forming and is mostly cartilage, making it easy for parents to accidentally squeeze feet into ill-fitting shoes. The effects of childhood foot damage can show up in posture and walking gait even in the early 20s. The 20th shoe is just as important as the 1st.

It is almost Summer Time!  That means lots of swimming at our house!  My son is literally a fish and loves to go swimming literally everyday.  I always apply sunscreen to him before he swims and reapply throughout the day every two hours, the problem with that is that he has to sit out and dry off before we can reapply, that is until NOW!  Neutrogena has a new wet skin sun screen! I have been using Crest Pro-Health Invigorating Clean Multi-Protection Rinse for the past month.  As you know I was selected to test drive this product for a month.  I have REALLY enjoyed it.  I was not much of mouth wash fan and I can really tell a difference when I don’t use it.  In fact I forgot to pack it with me for spring break and after two days into the week I broke down and picked up a bottle!  I guess that goes to show you how clean and refreshed my mouth feels when I use it.

Of course when it was time to make a meal, I decided to make the Chimichurri Burrito Casserole.  It fits my spicy style and it was delicious!  My four year old usually does not enjoy the spicy dishes I make but he really enjoyed this one!  I think it may have been because it has tomato sauce in it.  The tomato sauce really cools down the burn that I usually like but it helps with the kids.  This Chimichurri packet of Spice and Seasoning is made with natural spices, 0 trans fat per serving, no MSG, and has natural flavors.  This meal is being added to my menu plan for the winter.  It is perfect for those cold days where you are stuck inside.

Ingredients:

1 pkg. Lawrys Chimichurri Burrito Carrerole Spices and Seasonings
1-1/2 Cups Water
1 Can (8 oz) Tomato Sauce
1 lb Ground Beef
1 Can (15 oz) black beans, drained and rinsed
8 flour tortillias (8-inch), Warmed
1-1/2 Cup Shredded Mexican Cheese Blend

Directions:

MIX water, Seasoning Mix and Tomato Sauce until well blended.

BROWN meat in large skillet on medium heat. Drain Fat. Stir in one cup of the sauce mixture and beans. Spoon about 1/2 cup meat mixture into each tortilla and fold over sides. Place seam side down in greased 13x9x2 inch baking dish. Top with remaining sauce and sprinkle with cheese.

BAKE in preheated oven at 350 for 15 minutes or until heated through and cheese is melted.

***What I would add to this recipe:
Sour Cream
Tomatoes and Green Chilies
Lettuce

I was able to taste the SOYJOY’s newest flavors, banana, and blueberry!  Not only did I taste them but so did by hubby.  He liked them but had to eat 2 to fill him up   They also have Strawberry, Berry, Apple Walnut and Mango Coconut flavors.
