Crockpot Southwest Chicken is another slow cooker freezer meal that I prepped a week ago. It is very delicious and hearty! My whole family loved chicken and we even had leftovers the next day for lunch. I recently spent an afternoon making 10 Crockpot Freezer Meals and this was one of them.
You can make this recipe and cook right away or make as a freezer meal for future use. To make as a freezer meal be sure to write these directions on the bag – When freezing, be sure to write on ziploc bag – Cook on high 6-7 hours or low for 8-9 hours. 30 minutes before serving – shred chicken and add cubed cream cheese. Serve over rice or lettuce; or with cornbread . Place the ingredients into a gallon size freezer bag and freeze. When you are ready to cook simply pull out and thaw in the refrigerator for 24 hours. Place the contents of the bag into the slow cooker and cover. Look on low for 6 hours. This recipe is naturally gluten free.

Crockpot Southwest Chicken
Yield 4 -6
- 1 can of corn, drained
- 1 can of black beans, drained (optional)
- 16 oz jar salsa
- 2 lbs chicken breasts
- 8 oz cream cheese
- All ingredients to freezer bag (except cream cheese); mix well and freezer.
- When ready to cook, thaw overnight in fridge.
- Place ingredients in slow cooker and cook on low 8 hours.
- minutes before serving - shred chicken and add cubed cream cheese.
- Stir well and serve.
