This is a true dump and go crockpot recipe. Simply dump all the ingredients to a slow cooker. Cover and cook on low for approximately 5-6 hours. It is that simple! Hard to believe but it is true. We love to enjoy this on cold winter nights. Best of all you can really stretch your budget by using beans. A little chicken goes a long way in this recipe. It is a hearty recipe that everyone enjoyed. Even my picky eaters liked the flavors. Of course, you can't go wrong with a bowl of chili by the fire on a cold night.
If you want to prepare this as a freezer meal it is simple to do. Simply combine all the ingredients except the chicken broth and freeze. When you are ready to cook thaw in the refrigerator the night before. Place into the slow cooker and add your chicken broth and cook on low for 5-6 hours.

- 3 boneless chicken breast cubed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 chipotle minicube
- 1 can chicken broth
- 2 cans black beans
- 1 14.5 ounce can diced tomatoes with green chilies
- ¼ cup salsa
- 1 6 oz. can tomato paste
- 1 can corn drained
- 1 14 ounce bag of frozen green peppers red peppers, and onions
- 1 tablespoon garlic minced
- Add all ingredients to a slow cooker.
- Cover and cook on low for approximately 5-6 hours.
- Stir occasionally.
