    I encourage every person to take a Bucket List Trip to Barcelona Spain. Right before the Pandemic my son was invited to play soccer in Barcelona, and it was one of the best trips that we have taken.

    I had always wanted to travel to Spain, and we knew this was an opportunity of a lifetime. What we didn't realize that three short months after our trip that we would all be in a global pandemic. I am so grateful that we went because the memories will last a lifetime and in many regards this trip carried us through the pandemic.

    We had the opportunity to see Barcelona because of his invitation to play soccer and see all of the sights. It was simply breathtaking to see the architecture. The way of life and easy-going nature of the people is something that I will carry with me forever.

    Not only did he get to play and receive training with the FC Barcelona Academy we had the opportunity to experience Barcelona and visit many of the tourist attractions. We had a local guide for the entire trip which made it an even more amazing experience. We stayed at the Hotel Balmoral and it was really clean and nice. A great location for walking around the city too.

    Bucket List Trip to Barcelona Spain:

    El Poblenou - Is a neighborhood of Barcelona that borders the Mediterranean Sea to the south, Sant Adrià del Besòs to the east, Parc de la Ciutadella in Ciutat Vella to the west, and Sant Andreu to the north.  It was a really cool experience for the kids to train by the Mediterranean Sea. A must visit when in Barcelona. We took transportation to get there.

    Vila de Gràcia - A neighborhood in the Gràcia district of Barcelona, Catalonia Spain. This neighborhood was the main core of the old town of Gràcia that included also Camp d'e n Grassot and Gràcia Nova. We enjoyed walking through this neighborhood and stopping for meals and gelato. Walking distance from our hotel.

    La Pedrera - Casa Mila: Known as La Pedrera, this is a most unusual building, constructed between 1906 and 1912 by the architect Antoni Gaudí. A visit to La Pedrera, landmark building will give you a better understanding and appreciation of architecture and transports you immediately to the period when Antoni Gaudi lived. Purchase tickets in advance and get the audio tour so you can learn while you tour. We really enjoyed this one! It was walking distance from our hotel.

    Passeig de Gracia: This is a major street in Barcelona that is lined with shops, restaurants, bars and some of Gaudí's architectural masterpieces. It is a must see for shopping and dining while in Barcelona. Also, conveniently located within walking distance of many nice hotels. We walked from ours and did a little retail therapy! Prices on Gucci are less than in the US.

    Camp Nou: Is a football stadium in Barcelona, Spain. It has been the home stadium of FC Barcelona since its completion in 1957. It is the largest stadium in Spain and Europe. The vibe is like nothing I have ever experienced. It is definitely a bucket list item when you are in Barcelona. If they aren't playing you can always tour instead or do both. If you have a soccer fanatic like I do it is worth it! We took public transportation to get here. Be careful of pick pockets.

    Basilica of the Sagrada Familia: This is another one of Gaudi creations. I urge you to purchase your (skip the line) tickets in advance so you spend less time waiting and more experiencing the Catalan architect’s genius. It is still a work in progress but one of the most breathtaking cathedrals that I have ever experienced in my life. You MUST go inside!

    Jardins de Salvador Espriu - Located in the Gracia district of Barcelona. They are dedicated to Salvador Espriu who was a poet in the Catalan language. I waited my entire trip to see the lights lit for Christmas and on Thanksgiving Night they were! They are the most beautiful Christmas lights I have ever experienced. Lots of places to eat and stay in this area.

    Park Guell - Is a privatized park system composed of gardens and architectural elements located on Carmel Hill, in Barcelona, Catalonia, Spain. Park Güell is located in La Salut, a neighborhood in the Gràcia district of Barcelona. With urbanization in mind, Eusebi Güell assigned the design of the park to Antoni Gaudí. You will need to pay for admission, and I highly encourage you have a guide as it is busy and there is a wealth of information you will receive. We all enjoyed this.

    La Ramblas - This pedestrian street is lined with outdoor markets, shops, restaurants, and cafes. Barcelona's most famous street is a 1200-meter boulevard, and a major draw for visitors. We were told that FC Barcelona players drink from the fountain before a match for good luck so of course the boys did too! It is important to be careful in this area and watch for pick pockets. This area is most safely explored in the daytime and is a must see for everyone who visits.

    Cathedral of Barcelona

    Cathedral of Barcelona - A Gothic cathedral and seat of the Archbishop of Barcelona, Catalonia, Spain. The cathedral was constructed from the thirteenth to fifteenth centuries, with the principal work done in the fourteenth century. The roof is notable for its gargoyles, featuring a wide range of animals, both domestic and mythical. It is absolutely breathtaking and like something out of movie. When we were there mass was going on, so we didn't go inside but it was gorgeous.

    Monistrol de Montserrat Spain

    Monistrol de Montserrat - It is about an hour and half to travel to from Barcelona and WORTH the trip! It was absolutely the most breathtaking and awesome experience. It is a municipality in the comarca of the Bages in Catalonia, Spain. The municipality includes the southern two-thirds of the massif of Montserrat and the famous Benedictine monastery. The town, known as Montserrat-Vila, is situated on the eastern flank of the massif above the valley of the Llobregat river.

    It is connected with the monastery (higher up) and with the railway station in the valley by a rack railway (Cremallera de Montserrat). The C-1411 road links the town with Martorell and Manresa. We navigated our way via public transportation to Montserrat. You should purchase tickets in advance. It is one of the highlights of our trip. It is breathtaking and gorgeous!

    I wanted to share some tips for how to prepare for high school senior year. I cannot believe that my son is a senior in high school. I blinked and here we are.

    How to prepare for high school senior year:

    They say that the days are long, but the years are so, and they are RIGHT. It feels like just yesterday my son came home and here he is starting his high school senior year.

    I suggest that you start by keeping a good calendar. There are going to be so many activities and events that your head will spend. Teach your senior to keep their activities on a calendar (we use our phones) and it will keep everyone organized.

    Make a list of things you need to budget for this school year.

    We also chose to invest in a camera for my son. He paid for the majority of the camera and then we chipped in for a portion. This is great for him to capture the memories that he experiences during his senior year. He is already enjoying using it this summer. I plan to invest in a photo printer for him too.

    Check out the Buffalo Trace Distillery Tour. We just celebrated our 24th wedding anniversary and spent the day together.  We started out our day by visiting and taking the Trace Tour.

    First of all, this is the most frugal bourbon tour you will take in the state of Kentucky because it is FREE! Yes, absolutely FREE. They have a variety of tours that you can take. We chose the Trace Tour, but they also have the Expansion Tour, Old Taylor Tour, Bourbon Barrel Tour and the Arboretum & Botanical Gardens Tour. You can learn more by visiting the website.

    Buffalo Trace Distillery Tour

    The Trace Tour is an incredible introduction to the history and science of bourbon at Buffalo Trace Distillery. You will walk amidst the path of rolling bourbon barrels. You will be captivated by the alluring smell and atmosphere of bourbon sleeping inside the aging warehouses and enjoy the angel's share. The tour guides can teach guests of all levels and will bring the story of Buffalo Trace to life.

    The tours are 75 minutes, and all tours are complimentary and include a tasting of some of their award-winning products. We enjoyed 5 alcohol tastings, the most amazing root beer tasting (and I don't even like root beer and a bourbon ball.  The tasting really helps you identify what product you want to try. I thought it was really nice that they did a root beer and bourbon ball (no worries the alcohol is removed in the candy making process) for the kids who were on our tour too.

    This was a fantastic experience and if you live in Kentucky or are driving by, I highly recommend that you schedule a tour or at a minimum a tasting and visit the gift shop.  I would deem this to be one of the top 10 things to do in KY.

    BEST KENTUCKY TRAVEL:

    Visit Natural Bridge - I may never get to see the 7 wonders of the world, but I did get to see the wonder of Kentucky!  If you get the chance, you really need to Visit Natural Bridge located in Slade, Kentucky.  We are a hiking family and we had never been to this area.

    Road Trip to Rabbit Hash - Step Back in a moment in time! The town is notable for its name, its string of canine mayors, and its historic general store which was largely destroyed by fire in 2016.

    Flat Lick Falls - There is nothing more beautiful in Kentucky than Flat Lick Falls. We went to visit this waterfall and had a great time. It is a hidden gem in Jackson County, Kentucky.

    The Kentucky Castle - The Kentucky Castle is a unique destination that EVERYONE needs to put on their travel bucket list right here in Central Kentucky. It is not every day that you get the opportunity to stay in a castle.

    Cumberland Falls - Cumberland Falls and is known as the Niagara of the South. It is one of the most impressive waterfalls in the South and is definitely one to see.  It is located in Corbin, KY.

    Red River Gorge Getaway - This is one of the best getaways in Kentucky!

    50th Birthday Weekend Celebration

    I planned a surprise 50th Birthday Weekend Celebration for my sweet hubby. We graduated from Berea, KY and that is where we currently live. I decided for his birthday that I wanted to plan a reunion of friends to surprise him.

    50th Birthday Weekend Celebration:

    I started planning more than 6 months in advance. I messaged his friends to see who would be available and started making plans. His two best buddies agreed and then I started the planning.

    I decided to go with the theme Bourbon because my hubby always says the best two things that ever came out of KY was his bride and bourbon.

    I booked an Airbnb for them to stay in and reached out to Boone Tavern Hotel and made a room block for others who would joining us. I started reaching out to local venues about 3 months before to schedule and make reservations for dinners, a distillery tour and other activities.

    As the weekend drew closer, I followed up with all whom I invited to be sure they would still be able to join us.  I ordered specialty cookies with a Bourbon theme.

    Favorite Pork Roast Nachos

    I made a pork roast last week and we had a lot of leftovers.  We had visited a local Mom and Pop's, a few weeks ago, and they served pork nachos.  I thought I would try and give this one a shot. This is a quick and easy meal with leftover pork roast but can be just as easy with a fresh pork roast. My husband and I were highly impressed with the end result!     Favorite Pork Roast Nachos 

    We made these nachos with leftovers.  If you want to make it all fresh you may want to double the seasonings in the nacho recipe. This portion was split between my husband and I.

    Favorite Pork Roast Nachos

    I made a pork roast last week and we had a lot of leftovers. Check out this amazing recipe for our Favorite Pork Roast Nachos!
    Course: Dinner
    Cuisine: American, Mexican

    Ingredients

    • 1 bag Tortilla Chips
    • 1 Pork Pot Roast
    • 1 pouch Taco Seasoning
    • 1 can Southwest Corn, drained
    • 1 can Black Beans, drained
    • 1 small can Chopped Jalapeños (you can also use fresh)
    • 1 can ROTEL Mild Diced Tomatoes and Green Chilies, drained
    • 1 Bag Shredded Mexican Cheese
    • 1 container white queso cheese dip
    • Sour Cream
    • guacamole

    Pork Roast Ingredients

    • 1 3-5 LB Pork Roast
    • 1 ounce packet Ranch Dressing
    • 1 ounce packet Italian Dressing
    • 1 ounce packet Brown Gravy Mix
    • 2 cups Water

    Instructions

    • Heat canned southwest corn and black beans thoroughly, adding taco seasoning.
    • Add chips to plate and cover with heated mixture.
    • Top with shreded Mexican Cheese
    • Add heated Pork Pot Roast on top of the chips and mixture.
    • Add Rotel tomatoes, Jalapeños, and white queso cheese dip as desired.
    • Top with Sour Cream and Guacamole if desired.

    Perfect Pork Roast Recipe

    • Add roast to crockpot and cover with 2 cups water.
    • In a seperate bowl, combine the 2 seasoning packets and gravy packet together and mix well.
    • Sprinkle mixed seasoning over the pork roast.
    • Cover with crockpot lid and slow cook for 8-10 hours.

    How to Make Homemade Taco Meat - I prefer to make large batches when ground beef is on sale at the grocery store, so I can then freeze the taco meat into smaller quantities and have on hand.  You can make your own taco seasoning with seasonings you have at home.

    Crockpot Chicken Tacos - You only need four ingredients to make the chicken taco mixture. I served our Chicken Tacos on flour tortillas and then the family put their favorite toppings on.

    Weekend Trip to Berea KY

    Enjoy a Weekend Trip to Berea KY. This past weekend I planned and organized a trip to Berea, KY for my friends to celebrate my husband's 50th Birthday. We all met at Berea College so there was no place more nostalgic than a trip back to where we all met for his celebration.

    I have shared before why you should take a road trip to Berea, KY but now I am sharing a sample weekend itinerary with you. My friends were all thrilled with the weekend I planned so I thought I would share it with you too.

    Weekend Trip to Berea KY:

    I would suggest staying the Historic Boone Tavern Hotel or Pine Croft Cottage.

    Thursday: 4:00 pm - Check in Airbnb and Boone Tavern Hotel

    Thursday: 6:00 pm - Dinner at Nightjar (436 Chestnut Street)

    Friday: 7:30 am - Pick up for Bourbon Tour. Tour Woodford Reserve at 9:30 am.

    Friday: 11:00 am - Lunch immediately after (best to make a reservation) at The Stave. It was amazing!

    Friday: After lunch - Visit Castle and Key Distillery for a tasting and gift shop

    Friday: 6:00 pm - Dinner at Boone Tavern

    Saturday: 9 am - Hiking at the Pinnacles for those interested. Breakfast at Happy Jack's or Native Bagel.

    Saturday: Walk around campus, shopping at College Square and Old Town. Berea Farmer's Market is open. Kayaking or bike rental available via Get Outside KY. Lunch options: Noodles Nirvana or Papaleno's.

    Saturday: 7:00 pm - Dinner at Honeysuckle (100 Churchill Court, Berea, KY).

    Sunday: 11:00 - Checkout of Airbnb/Hotel

    Sunday: 11:00 am - Brunch at Honeysuckle. or Boone Tavern.

    And that's a wrap! We had a blast and I promise you if you come to Berea, KY you will too. It is a great place to shop, eat, relax, enjoy the outdoors and visit.

    Pine Croft Cottage is a hidden gem in Berea KY and is the perfect destination to stay if you want a little privacy for a friend gathering or special occasion. It is located at the base of the Pinnacles and is only 2 miles from town.

    This past weekend I hosted a surprise 50th birthday gathering in Berea, KY for my husband. I invited our college friends to come into town to visit and planned a weekend together that none of us will ever forget.

    Pine Croft Cottage hidden gem Berea KY:

    I wanted a location for my husband and his two best buddies to be able to stay together. Pine Croft Cottage was the perfect spot! It is the perfect place to stay if you would like some peace and quiet while still enjoying everything Berea has to offer. My other friends who came into town stayed at The Historic Boone Tavern Hotel.

    Pine Croft is a piece of Berea and Appalachian History. It was built for Ms. Anna Ernburg, a native of Sweden who was brought to Berea College to oversee the Fireside Industries and the weaving program at Berea College. The cottage sits next to the Berea College Forest and the pinnacles hiking trails. The trails are actually connected to the property which makes it super convenient for hikers.

    This hidden gem of a property honestly feels out of storybook when you drive back to the cottage. It is secluded and hard to believe that is only 2 miles away from town.

    This 2000 square foot cottage provided them each with their own room. It features three bedrooms, two bathrooms, a large living room, big kitchen (with natural gas stove) and an eat in dining table and a small sitting area where you can also play the legendary game, skittles.

    In addition, it had a nice back patio with gas grill and plenty of seating and a delightful screened in porch where the guys sat each morning enjoying their coffee and chatting.

    It is owned by Berea College and managed by The Historic Boone Tavern. Pine Croft Cottage is two stories, it has ramp access for the main building, and 1 bedroom downstairs for any ADA needs. The downstairs bathroom contains a walk-in shower along with a washer and dryer.

    Upstairs there are two bedrooms with a bathroom and both of the rooms were huge! One had two chairs and the other had one. It was really amazing how much closet space each room offered too. We loved all the Berea College furniture too!

    The "cabin" as my husband and his buddies called it was so enjoyable. It was much larger than we anticipated and allowed for everyone to find their own space as well as enjoy each other's company.

    How to save money during inflation. Times are getting tough. Groceries costs more, gasoline costs and dining out costs more. Now is the time to start making some of your own cleaning products and figuring out how you can save from your family's budget.

    How to save money during inflation:

    Start with these DIY Cleaning Wipes and make extras for use on countertops, doorknobs, handles, and more. For all other surfaces, I use this Homemade All-Purpose Cleaner. It's a great option for use with cloth or paper towels and ideal for everything except wood. Even then, most wooden surfaces would be safe to clean with it.

    For the bathroom, I like to keep this Natural Bathroom Cleaner. I also like to use this DIY Natural Bathtub Cleaner for my bathtub and shower. It is easy to whip up and works wonderfully to clean and remove mold and soap scum. Of course, I also keep my mirrors sparkling clean with this great Homemade Glass Cleaner.

    In the kitchen, you'll want to make this Natural Oven Cleaner and the All-Natural Microwave Cleaner. Both are ideal for making sure your cooking surfaces are sparkling clean and sanitized.

    For use on those wood surfaces like tables, coffee tables, and railings, make this simple Wood Dusting Spray. This is a favorite and ideal for keeping my entertainment center and end tables looking great and dust-free.

    Of course, my list isn't complete without some products to help ease up the laundry routine.
