Wash and cut into ½" slices and boil for 3 minutes, timing from when vegetables enter the water.
Plunge into an ice bath, drain, and freeze in a heavy duty plastic freezer bag or food saver bags. It is perfect for soups and stews. I even like to grill or steam it.
