    Red Velvet Sandwich Cookies

    Red Velvet Sandwich Cookies are perfect for Valentine's Day!

    If you love Red Velvet Cake you are going to love these Red Velvet Sandwich Cookies!  I think it would be perfect for Valentine's Day or Christmas.  If you want you can also make your own Homemade Whipped Cream Cheese Icing as the filling or grab a can of icing if you prefer.  The cookies are so good I can promise that no one will realize 🙂  I have even purchased a small container from the local bakery before too!

    How to make Red Velvet Sandwich Cookies

    Start by preheating your oven to 375 degrees F.  Next, mix together flour, cocoa powder, baking powder, baking soda and salt in a small bowl.

    Then cream together the butter and sugar until light and fluffy, which is about 3 minutes. Add the eggs 1 at a time. Then beat in the buttermilk, vinegar, vanilla and red food coloring. Once combined, add the dry ingredients to wet. Mix until thoroughly combined.

    I know it sounds like several steps but I promise it is going to be worth it!  Finally drop batter using an ice cream scoop onto a parchment lined sheet tray, forming 2-inch round circles. Bake for 10 minutes, until baked through. Cookies should be cake-like and light. Allow to cool for a few minutes on the baking sheet, then remove to a wire rack to cool completely.

    For the Cream Cheese Frosting:  In a large mixing bowl, beat the cream cheese, butter, and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.  Spread the cream cheese frosting between 2 cooled cookies.

    My Mother-in-Law makes Whoopie Pies as sells them at local bake sales for her Legion.  They are always a huge hit!  It is fun twist on the traditional cookie or red velvet cake.

    Red Velvet Sandwich Cookies

    Ingredients

    • 1 ⅓ cups all-purpose flour
    • 2 tablespoons cocoa powder
    • 1 teaspoon baking powder

      ...alternately, use a Red Velvet cake mix / box to make the cookies*
      (1 stick of butter or margarine, softened or melted. 1 egg. mix powdered cake mix with butter and egg, add up to a tablespoon of water if mixture is too thick. bake at 350 for about 20 minutes, depending on your oven.)

      .....and use a can of Creamy White or Vanilla frosting for the middles.

      rolling in chopped pecans, or sprinkles, totally optional 😉

      {* also makes delicious chocolate chip cookies, using a yellow cake and your favourite chips!}
