    Hot Chocolate Lasagna

    You will love this Hot Chocolate Lasagna. When you think of hot chocolate, you probably imagine a piping warm cup of deliciousness on a cold winter day.  Let me tell you, you haven't lived until you've had a piece of this Hot Chocolate Lasagna Recipe.  It's so delicious, super easy to make, and well, perfect for holiday gatherings.  Since it is an icebox dessert, it doesn't have that warmth from the drink, but it does bring all of the flavors with a bit of extra goodness along the way. 

    Hot Chocolate Lasagna Recipe:

    Whether you call this a layered icebox cake or a dessert lasagna, one thing is for sure - you are bound to love every bite.  I like that this is super easy to make for a crowd and ideal for potlucks.  While 2020 isn't a year for gatherings, we still have a family to celebrate with and that means an easy dessert like this is somewhat light after a large feast around Christmas. If you like chocolate and marshmallows, then you will absolutely love this recipe! 

    What is a Dessert Lasagna? 

    Dessert lasagna is usually, or icebox cake typically consists of some type of cookie crust, gelatin or pudding layer, whipped cream, and toppings.  This layered dessert reminds many of a savory lasagna because of the layering but has nothing else in common with the past dish. 
    Dessert lasagnas often include cookies, pudding, cream cheese or cheesecake filling, whipped cream or whipped topping, nuts, candy pieces, cookie crumbs, or in this case, marshmallows.  A drizzle of syrup of some sort or fresh fruit on top usually completes the recipe. 

    Can I Make This Healthier? 

    One of my favorite parts of a dessert lasagna or icebox cake is that while it looks decadent, it can easily be not too bad for you.  You can use sugar-free or fat-free ingredients and of course, cut out the additions like marshmallows on top if wanted.  I like to use sugar substitutes in dishes like this when I can to lower the calorie count.  The recipe below is not low calorie, but you can make minor adjustments to lower the calories in yours. 

    Ingredients:

    For Crust: 

    • 12 pkg Oreo cookies, crushed
    • ½ cup unsalted butter, melted

    For Chocolate Mousse: 

    • ½ cup unsalted butter, softened
    • 8 oz. cream cheese, softened
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 5 envelopes of instant hot cocoa mix 
    • 1 ½ cups heavy whipping cream

    For Chocolate Pudding:

    • 2 (3.8oz) pkg instant chocolate pudding mix
    • 2 ¾ cup milk
    • 1 cup mini marshmallows

    For Topping: 

    • 8 oz. whipped topping (Cool Whip)
    • 2 cups mini marshmallows
    • ½ cup fudge sauce

    How to Make Hot Chocolate Lasagna

    Crush the cookie crumbs until fine and stir together with melted butter then press into the bottom of a 9"x13" baking dish.  Refrigerate for at least 20 minutes. 

    For the mousse layer, in a large bowl, beat together the butter, cream cheese, powdered sugar, and vanilla extract until smooth. 

    Using a separate bowl, beat the whipping cream and hot cocoa mix until stiff peaks form.  Once stiff, gently fold in ½ at a time until all is incorporated with the cream cheese mixture.  Spread over the top of the prepared crust, cover, and refrigerate while preparing the next layer. 

    For the pudding layer, combine the milk and instant pudding together and mix until thickened.  Stir in the mini marshmallows and then pour over the cheesecake layer and spread evenly.  Cover and refrigerate for at least 20 minutes. 

    On top of the layered dessert, spread the whipped topping in an even layer then sprinkle on marshmallows.  Drizzle the top with hot fudge sauce.
