    Check out this new Knorr mealtime starter that is sure to help you keep mealtimes simple.  This is an easy meal solution that is also affordable. You don't have to be a chef to prepare these simple but delicious healthy dinners for your family.  Now you can Make More at Mealtime and feel good about the food’s impact on your families’ health. I love to serve these on busy weekdays when we are running off to soccer training.

    The Knorr One Skillet Meals are made with whole grains and taste good! The best news is that they contain no artificial flavors and no colors from artificial sources.  The Lemon Chicken with Barley is seasoned with lemon, savory herbs and garlic.  My family gave it two thumbs up and said it was delicious. I was not sure how they would like the barley but in the end they all thought it was flavorful and delicious.

    I love being able to prepare a "semi homemade" meal on busy nights.  It makes me feel great as a mom to serve a hearty meal with veggies and whole grains instead of being tempted to stop for fast food. Plus it is great for my budget too!

    With this simple recipe all you need are chicken, spinach and carrots and olive oil, in addition to the Knorr One Skillet Meals - Lemon Chicken with Barley.  In around 30 minutes you can have quick and nutritious dinner ready to serve your family.  Regardless of if you are a busy Mom this is an easy meal that can be enjoyed any night of the week.  I love that you can simply pick up these items at Target while you are on the go!

    Knorr Lemon Chicken with Barley

    2 TBSP. olive oil
    1 package (6 oz) baby spinach
    1 cup sliced carrots, about ½ inch thick
    1 tablespoon flour
    2 cups water
    1 lb. boneless, skinless chicken breasts, cut up into bite-sized pieces (season with salt and pepper - if desired)
    1 package Knorr One Skillet Meals - Lemon Chicken with Barley

    Instructions

    • Heat olive oil in a large nonstick skillet over medium-high heat. Toss your chicken with flour and then cook 4 minutes until browned. (Chicken will continue to thoroughly cook in Step 2 with the barley).
    • Add water, carrots, and contents of the Knorr One Skillet Meals to the skillet and bring to a boil. Cover, turn down the heat to medium-low heat and simmer 23 minutes or until the barley is tender. (Be sure to keep covered).
    • Place your spinach on top of the barley mixture and cover. Remove from heat and let stand covered 2 minutes (the heat will begin to wilt the spinach). Stir until spinach is completely wilted and well blended.
