This is a great recipe for roast chicken that is perfect for freezer meals. It is the perfect recipe to use for freezer cooking. I love this recipe because you can make a bulk amount and prepare four chicken recipes with it for freezer cooking. I also love to cook my whole chickens in my crockpot too! I like to prep it in advance and then freeze it for when I am ready to use it too. It is nice when you find chicken on sale.
Weight Watchers Points Plus: 3 Points Per Serving (12 servings chicken)

Ingredients
- 2 Whole Chickens about 6 lbs each
- 1 tsp black pepper
- 1 TBSP olive oil
- 2 tsp salt
- 8 large cloves garlic
Instructions
- Rinse chickens. Season both the inside and outside of the chicken with salt and pepper. Place breast side down on racks in two roasting pans. Toss garlic heads in oil and place in the roasting pans. Roast the chicken and garlic in a 400 degree oven for 1 hour and 10 minutes. Cool. Separate garlic into cloves and squeeze pulp out of each clove into small bowl. Mash with a fork. Remove meat from chicken and dice. Discard skin and bones. Cover and refrigerate for up to three days.

What do I do with the garlic after it's mashed? I'm assuming I mix SOME with chicken but surely not 8 heads.

I personally combine with all 8 cloves of garlic. Roasting the garlic brings a milder flavor but you can discard what you want.
