    This Microwave Coffee Mug Scramble is easy for breakfast and perfect when you are on the go!

    This Microwave Coffee Mug Scramble is perfect for busy mornings. I have been looking for an easy scrambled egg recipe - my son eats them every morning however I wanted to do a one-step method and eliminate the pan and it dawned on me to try the microwave! It works like a charm, and he loved them. So easy!

    This would be great if you are eating low carb too!  Simply make your mug and head out the door!  Hope you enjoy! This Microwave Coffee Mug Scramble is easy for breakfast and perfect when you are on the go! It is Keto Friendly too!

    Microwave Coffee Mug Scramble

    Ingredients

    • 2 eggs
    • 1 tablespoon milk
    • 2 tablespoon shredded colby jack cheese
    • Dash of Salt and Pepper

    Instructions

    • Coat a microwave safe mug with cooking spray or melted butter. Add 2 eggs and milk, beat with a fork until well mixed, add a dash of salt and pepper if desired.
    • Microwave on high for 45 seconds: stir. Microwave until eggs are almost set (30-45 seconds more).
    • Top with cheese and microwave for 5 seconds.
