Easy Vegan Rice Noodle Stir Fry

  • 1 small package rice noodles usually 10-12 ounce
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 kohlrabi sliced into strips
  • 2 stalks celery diced
  • 1 red or yellow onion sliced thin
  • 2 cloves garlic minced
  • 2 teaspoons olive oil
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 1 tablespoon miso paste found in refrigerated section of Asian stores
  • 1/4 cup low sodium soy sauce
  • 1/4 cup vegetarian mushroom flavored stir-fry sauce


  1. Place rice noodles in a pot of boiling water for 2 minutes. Remove, drain, and set aside.
  2. In large wok or skillet, add olive oil, broccoli, bell pepper, kohlrabi, celery, and onion. Cook over medium heat, stirring occasionally, for 5-7 minutes or until vegetables are tender.
  3. Add the sesame oil, miso paste, soy sauce, stir-fry sauce, and rice noodles. Mix all ingredients together until flavors combined. Cook for additional 3-4 minutes or until heated through.
  4. Serve.
