Mamaw's Zucchini Bread Recipe

Ingredients

  • 3 cups unsifted flour
  • 3 eggs
  • 1 cup salad oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 can 8 1/4 oz. crushed pineapple , do not drain can
  • 1 1/2 cups pecans chopped
  • 3/4 teaspoon nutmeg
  • 2 cups shredded unpeeled zucchini

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients except zucchini in a large bowl; mix well.
  3. Stir in zucchini until well blended.
  4. Pour into a greased loaf pan and place in oven.
  5. Bake for 1 hour or until done (when toothpick comes out clean in middle).
  6. Let cool for 15-20 minutes before slicing.
