Weight Watchers Chicken Verde Soup

Ingredients

  • 2 cups chicken shredded
  • 1 cup black beans
  • 1 cup whole kernel corn
  • 1 cup Verde salsa
  • 1 cup mild salsa
  • 6 cups low fat chicken stock
  • 2 cups water
  • 1 bell pepper diced
  • 1 small onion diced
  • 3 cloves minced garlic
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1 teaspoon white pepper black pepper is okay if preferred

Instructions

  1. Combine all ingredients in Crockpot and cook on low for 3 hours.
  2. If using raw chicken breasts in this recipe, cook on high for 4 hours. Reduce setting to low heat, and shred chicken with forks or tongs. Stir the soup well to mix chicken throughout, and cook for an additional hour.
