Slow Cooker Honey Lime Chicken and Butternut Squash

Ingredients

  • 1 pound cubed butternut squash
  • 1/3 cup olive oil
  • 2 TBSP Apple Cider Vinegar I use Bragg's
  • 1 TBSP Raw Honey I use local raw honey
  • 4-6 boneless chicken breasts or boneless skinless chicken thighs I used 2 lbs
  • 1 fresh lime juiced or 2 TBSP Lime Concentrate - I use Santa Cruz
  • 1 tsp dried garlic
  • salt/pepper
  • 1/2 cup chicken broth

Instructions

  1. Salt and pepper your chicken breasts.on both sides
  2. Add all ingredients to a freezer safe bag except chicken broth.
  3. Freeze.
  4. When ready to cook thaw in the refrigerator overnight.
  5. Place into slow cooker and add 1/2 cup chicken broth.
  6. Cook on low for 6-8 hours.
