Southwestern Sloppy Joes from Prep Ahead Meals From Scratch

Ingredients

  • 1 tbsp. 15 ml olive oil
  • 1/2 cup 80 g diced onion
  • 1/3 cup 50 g diced bell pepper
  • 2 cloves garlic minced
  • 1 cup 245 g cooked ground beef
  • 1 cup 350 g cooked pinto beans, kidney beans or black beans
  • 3/4 cup 180 g tomato sauce
  • 1 tbsp 8 g Taco Seasoning Mix
  • 4 buns hamburger buns
  • slices Sliced cheddar cheese optional
  • Shredded lettuce optional
  • Tomato slices optional

Instructions

  1. Heat the olive oil in a skillet. Add the onion, bell pepper and garlic. Saute until the onion is tender, approximately 5 minutes.
  2. Add the ground beef, beans, tomato sauce and taco seasoning. Stir well. Cook over medium heat until the ground beef is heated through.
  3. Serve on hamburger buns, topped with the cheese, lettuce and tomato.
