Slow Cooker Beef Barley Stew

Ingredients

  • 1/2 to 1 lb leftover cooked beef roast meat shredded or cubed
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1 14 oz can stewed tomatoes
  • 1 can corn drained
  • 1/8 tsp black pepper
  • 1/4 tsp thyme
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp parsley flakes
  • 1/2 cup barley
  • 2 cups chicken broth
  • 1 1/2 cups beef broth

Instructions

  1. Add all ingredients to slow cooker and mix well.
  2. Cover with lid and cook on low 8-10 hours.
  3. Serve with bread pieces or crackers.
