Slow Cooker Cinnamon Honey Carrots

  • 2 lbs. baby carrots
  • 3/4 C packed brown sugar
  • 1/4 C honey
  • 1/2 C orange juice
  • 1/4 C melted butter
  • 3/4 tsp ground cinnamon
  • Chopped fresh parsley for garnish


  1. Place carrots in a 4 quart slow cooker and spray with cooking spray.
  2. In a large bowl combine sugar, honey, juice, butter and cinnamon.
  3. Pour mixture over carrots and stir to coat.
  4. Cover and cook on high for 3-4 hours or until the carrots are fork tender.
  5. Stir occasionally and check tenderness as they cook.
  6. Strain juice from carrots and place in a pan on the stove and bring to a boil.
  7. Boil until mixture reduces down to about half.
  8. Pour back over carrots.
  9. Garnish with fresh parsley and serve.
