Ingredients

  • 6-8 med/large potatoes peeled and cubed
  • 4 cups chicken stock
  • 1/2 cup chopped onion more if you love onions
  • 2 tsp black pepper

Instructions

  1. Place all ingredients in crockpot; stir and place lid on.
  2. Cook on low 6-8 hours.
  3. Remove lid and using hand masher, gently mash potatoes to make soup thicken up.
  4. Stir well and serve.
