Sauteed Zucchini and Squash

  • 1 zucchini chopped
  • 1 squash chopped
  • 2 Tbsp olive oil
  • 1 Tbsp minced onion
  • salt and pepper for seasoning if desired


  1. In small bowl add vegetables, oil and seasonings; mix well.
  2. Heat non-stick skillet over medium-high heat.
  3. Slowly add vegetable mixture.
  4. Place lid on skillet.
  5. Saute for 3-4 minutes then stir.
  6. Place lid back on and saute another 3-4 minutes.
  7. Stir again, leave lid off and continuously stir until veggies are tender or to your liking.
  8. Serve immediately.
