Crockpot Loaded Baked Potato Soup

Ingredients

  • 6 Large Potatoes peeled and cubed
  • 1 Large Onion diced
  • 1 Quart Chicken Broth
  • 2 Garlic Cloves minced
  • 1/4 Cup Butter
  • 1 Cup Heavy Cream
  • 1 1/2 Cup Shredded Sharp Cheddar Cheese
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Combine all ingredients in a 6 QT slow cooker except for heavy cream and cheese.
  2. Cook on low for 8 hours.
  3. Next mash potatoes until coarsely chopped and soup is slightly thickened.
  4. Add cream and cheese and cook another 30 minutes.
  5. Stir; serve and enjoy.
