Zucchini Lasagna

Ingredients

  • 1 large or 2 medium zucchini
  • 30 oz Ricotta Cheese
  • 1 cup Parmesan Cheese
  • 1 -2 cup mozzarella cheese
  • 2 tsp Italian Seasoning
  • 1 tsp garlic
  • 24 oz tomato sauce no sugar added
  • 1/2 onion chopped
  • 1 LB ground beef cooked and drained

Instructions

  1. In a skillet brown your ground beef and onion and drain.
  2. Peel and slice zucchini in long slices for form "lasagna" noodles
  3. Grease 9x13 pan with oil and place a layer of zucchini on the bottom of the pan. Cover the entire bottom.
  4. Add cooked beef and onions.
  5. Add sauce on top.
  6. Sprinkle with 1 tsp Italian Seasoning and 1/2 tsp garlic
  7. Add another layer of zucchini
  8. Mix Ricotta Cheese and Parmesan Cheese together and spread on top of the zucchini
  9. Top with 1 tsp Italian Seasoning and 1/2 tsp garlic
  10. Cover with 1-2 cups mozzarella cheese
  11. Cover with aluminum foil and bake for 1 hour or until zucchini is cooked done at 400 degree temperature.
