Slow Cooker Pork Carnitas

Ingredients

  • 3 lbs boneless pork chops
  • 1 onion diced
  • 1 yellow pepper sliced
  • 1 orange pepper sliced
  • 1 red pepper sliced
  • 2 garlic cloves crushed and minced
  • 2 TBSP chili powder
  • 1 TBSP. cumin
  • 2 bay leaves
  • 1/2 cup taco sauce
  • 1/2 cup water
  • salt and pepper to taste

Instructions

  1. Place water in crockpot
  2. Add Pork Chops
  3. Place all ingredients on top and slightly stir
  4. Cook on high for 5-6 hours or low for 7-8 hours.
  5. Shred meat with a fork or sharp knife on a cutting board.
  6. Serve with tortillas, cheese, salsa, lettuce, tomatoes, guacamole, sour cream or any other topping that you prefer.
