Salmon with Mango Salsa

Ingredients

Salsa:

  • 1 Mango Ripe
  • Fresh Cilantro
  • Lime
  • Tomato chopped and de-seeded
  • 1/4 cup Onion chopped

Salmon:

  • Fresh Salmon I prefer Wild Caught
  • Salt
  • Pepper
  • Olive Oil
  • Lemon optional

Instructions

Salsa:

  1. Cut your Mango into cubes
  2. Add chopped onion and tomato
  3. Squeeze a lime into the mixture
  4. Add Cilantro
  5. Allow to refrigerate for 1 hour

Salmon:

  1. Place fresh salmon skin side
  2. Heat a heavy nonstick pan over medium heat and add enough olive oil to lightly coat the bottom of the pan. Heat your pan and add the salmon fillet skin side up and season with salt and pepper. Turn after four to five minutes and cook for the same amount of time, until the fish barely flakes.
  3. Add to your plate and add Mango Salsa to the top and add a slice of lemon
