Tuna Stuffed Avocado

Ingredients

  • 1 avocado halved
  • 1 tuna pouch Melissa uses Wild Planet canned tuna
  • 1 mini sweet red bell pepper chopped
  • 1 mini sweet orange bell pepper chopped
  • 1 mini sweet yellow bell pepper chopped
  • 1 lemon
  • salt and pepper to taste (optional)

Instructions

  1. Scoop out avocado and place in bowl.
  2. Mix avocado with tuna and bell peppers.
  3. Squeeze lemon juice over mixture.
  4. Scoop back into avocado.
  5. Squeeze more lemon juice over the top.
  6. Add salt and pepper if desired.
  7. Serve and enjoy!
