Chicken - N - Rice

Ingredients

  • 2 lb boneless skinless chicken breasts
  • 6 cups water
  • 1 can chicken broth
  • 3 t pepper
  • 1 t salt
  • 1 stick butter
  • 4 cups cooked rice

Instructions

  1. Bring water and can of chicken broth to boil.
  2. Add chicken and reduce to simmer.
  3. Simmer for 25 minutes.
  4. Remove chicken and let cool.
  5. Retain 2 cups of the broth and discard the rest.
  6. Cook your rice while chicken is cooling.
  7. Make sure to drain rice.
  8. Once chicken is cool enough, shred with forks.
  9. Add shredded chicken to rice.
  10. Add butter, pepper, salt and 1 cup of the broth you saved.
  11. Mix together until creamy.
  12. If needed add the other cup of broth.
