Baked Squash Recipe

Baked Squash is a healthy twist on the traditional fried squash. A southern comfort food.

Ingredients

  • 1 whole Squash cut into slices
  • 1/2 cup of Way Better Chips Sweet Chili crushed finely
  • 1/4 cup almond flour
  • 2 large eggs beaten
  • 1 TBSP olive oil

Instructions

  1. Preheat oven to 350.
  2. Mix flour and crushed chips together in shallow bowl.
  3. Put olive oil on baking sheet.
  4. Dip squash into egg mixture and coat both sides.
  5. Then dip into chip/flour mixture and coat both sides evenly.
  6. Place on baking sheet.
  7. Cook for 12 minutes and turn over.
  8. Cook for additional 10-15 minutes, until golden brown.
  9. Serve warm.
