Gluten Free Breakfast Casserole

This gluten free breakfast casserole is AMAZING! My guests never realize it is gluten free until I take a bite!

  • 1/2 loaf of gluten free bread
  • 1 package hormel naturals ham or 1 lb sausage cooked with grease drained
  • 12 eggs
  • 1 cup milk
  • 2 cups shredded cheese I use colby jack
  • 1/4 tsp pepper
  • 1/8 tsp salt


  1. Grease pan with butter.
  2. Place gluten free bread in the bottom of the pan (butter the bread - optional)
  3. Beat (whisk) eggs and add milk, salt and pepper.
  4. Sprinkle chopped ham or cooked sausage over bread
  5. Add cheese.
  6. Pour egg mixture over.
  7. Refrigerate for up to 24 hours.
  8. Bake 30 minutes at 350 or until set.

Recipe Notes

Use your choice of ham or sausage in this recipe.  You can also use gluten free or regular bread.
