Saute chicken breast until golden brown and cooked through, approximately 5 minutes per side. Top with avocado, tomato and pepper jack cheese. Melt cheese under broiler or in a covered skillet. Serve immediately.
Can also be made on the grill or baked in the oven. Cook through and then add toppings to melt cheese.
