Blueberry Cream Cheese Muffins

  • 1 package Moist White Vanilla Cake Mix
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 3 ounce package cream cheese, softened
  • 3 egg whites
  • 1 1/2 cups fresh blueberries
  • 2 tablespoons coarse sugar crystals decorating sugar or granulated sugar


  1. Heat oven to 375. Grease bottoms of 24 medium muffin cups with shortening or line with paper baking cups.
  2. Beat cake mix, milk, oil, cream cheese and egg whites in a large bowl with electric mixer on low speed 3 minutes; beat on medium speed 2 minutes. Gently stir in blueberries. Divide batter evenly among muffin cups. Sprinkle with sugar crystals. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Serve warm or cool. Store tightly covered at room temperature. Makes 24 muffins.
